Go for rides on them.
It doesn't really matter what mode of transportation you use,you have basically the same odds of safety. 50/50-either something will happen or it won't.
All modes of transportation are relatively safe when you look at passenger miles traveled over time.

To ease this fear start reading everything that you can find on the safety of flying and also boats.
Also read and research the safety records of the airlines on which you might be traveling.
You will find that Pilots from all of the major airlines have had intensive training, the same goes to persons who are Captains
of boats and cruise liners.

the best way is to look at how many crashes happen each year.
someone once said that having a commercial plane crash. is as chancy as
getting struck by lightning on the 4th of july while having a metor strick you on your little tow.
so next problem is boats.
i assume your fear is of drowning in a enclosed space (i curse the movie titanic for its many nightmares it has given me)
given the HUGE size of all the boats now-a-days, it takes a tidal wave to even phase the ship,
they are extremely save, and if your still scared stay up in a higher deck space by the door, like by the lounge.

Most curious, car rides are more accident prone than airplanes. Freak accidents do occur in all modes of transports, but fearing them will bring down the quality of your life. Good counselling should bring down these anxieties.

go face to face with your fears. ride in airplanes and boats. you are more likely to get into a car accident then a plane accident. boats, well, you always can bring a flotation device.
