Okay, so, I was lazy this year and didn't get my mom a V-day gift. So tomorrow morning, I am getting up really early and baking for her. So, my idea is to make a pizza cookie (you know, one giant cookie in the shape of a pizza) The problem is, I don't know what to do for it. To make a pizza cookie, do you just have to get your baking pan and spread it out in the shape of a big round circle or is it not that simple? I'm assuming also that you just use a regular cookie recipe rather than having some special recipe. Okay, so I would like a recipe for peanut butter cookies. I don't have peanut butter chips so I can't use one of those recipes. We also don't have any chocolate chips so any good recipes for cookies? Thanks in advance!

If the mix can fit the baking pan, I don't see why not - although if it can't, then you won't get the perfect round shape. Also, by stretching it out like that, the cookie might be a bit thin. Anyway try this recipe, and good luck! =o)

Classic Peanut Butter Cookies
Recipe Yield: 24

INGREDIENTS

* 1 cup unsalted butter
* 1 cup crunchy peanut butter
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs
* 2 1/2 cups all-purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon salt
* 1 1/2 teaspoons baking soda

DIRECTIONS

1. Cream together butter, peanut butter and sugars. Beat in eggs.
2. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Stir into batter. Put batter in refrigerator for 1 hour.
3. Roll into 1 inch balls and put on baking sheets. Flatten each ball with a fork, making a criss-cross pattern. Bake in a preheated 375 degrees F oven for about 10 minutes or until cookies begin to brown. Do not over-bake.

My favorite place to get recipes is allrecipes.com they have an awesome search engine where you can enter the ingredients you have on hand that you want to use, and then enter the ingredients you don't want to use like chocolate chips and it will search the site for those type of recipes. I love this site because people who tried the recipes leave feed back and comments they also rate the recipe with a star system. I never use any recipes that less than 50 people have tried and rated and it has to be 5 stars or I won't try it. You can use aluminum foil to make the heart shape make sure it is really tick with several layers of foil shape it like a heart and put your cookie dough in the center of it and spread it out. Then it works like a dam and keeps your dough in the heart. Happy baking!! P.S. I found a heart shaped pan at Walmart last year you could call around to department stores near you, since it's close to Valentines day you may find one.

Sugar Cookie Pizza
8-10 servings 35 min 20 min prep

1 package refrigerated sugar cookie dough
1 container Cool Whip
1 cup vanilla yogurt
1 can crushed pineapple
1 pint strawberries
1 pint blueberries

Roll out cookie dough on a cookie sheet and bake according to package directions.
Cool completely.
Combine Cool Whip and vanilla yogurt.
Top cookie crust with mixture.
Drain pineapple well.
Layer on top of coolwhip mixture.
Slice strawberries and wash blueberries.
Arrange on top of pineapple.
Chill 1 hour.

Raspberry Cheesecake Cookie Pizza
12-16 servings 1 hour 25 min prep

3/4 cup butter (softened)
3/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1 1/2 cups all-purpose flour
8 ounces cream cheese (softened)
1 egg
1 tablespoon sugar
1/3 cup seedless raspberry preserves
1/4 cup sliced almonds, toasted

Beat the butter in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds.
Add the 3/4 cup sugar and beat till combined.
Beat in egg yolk and vanilla till combined.
Beat in as much of the flour as you can with the mixer.
Stir in any remaining flour with a wooden spoon.
Spread dough in a lightly greased 12 or 13 inch pizza pan.
Bake in a 350-F oven about 25 minutes or till golden.
Meanwhile, beat together cream cheese, 1 egg and the 1 tbl sugar till smoth.
Spread over hot crust to within 1/2 inch of the edge.
Dollop reserve on top.
With a knife, carefully swirl preserve to marble.
Sprinkle with almond.
Bake 5 to 10 minutes more till filling is set.
Cool in pan on a wire rack.
Cut in wedges.
Store in refrigerator.

APPLE & SPICE PIZZA COOKIES

3/4 c. (1 1/2 sticks) butter, softened
3/4 c. sugar
1 egg
1 1/2 c. flour, unsifted
1 1/2 tsp. cinnamon
1 c. (1 med.) apples, shredded
3/4 c. oats, uncooked
1/2 c. brown sugar
1 tsp. vanilla
3/4 tsp. soda
3/4 tsp. salt

Beat butter and sugars until creamy. Add in egg and vanilla and beat. Add in dry ingredients and beat until smooth. Stir in apples and oats. Spread evenly on generously greased pizza pan. Bake 20 to 25 minutes or until golden. Remove from oven. While hot sprinkle with 1 (6 ounce) package chocolate chips. Let stand until soft then spread. Sprinkle 1 cup chopped pecans on top of chocolate. Sift 1/2 cup powdered sugar, add 2 teaspoons milk. Mix until smooth. Drizzle on top of pizza cookie.


ROSE'S COOKIE PIZZA

1 c. flour
1/4 c. powdered sugar
1 cube butter
1/4 to 1/2 c. chopped nuts

FILLING:

8 oz. cream cheese
1/4 c. sugar
1/4 tsp. lemon juice
Cream or sour cream or milk

TOPPING:

Fruit of your choice (strawberries, kiwi, peaches, blueberries, raspberries, bananas, etc.)

Crust: Melt butter in pan (or microwave). Mix rest of crust ingredients together with butter. Shape on a 12 inch pizza pan. Bake 15 to 20 minutes at 325 degrees. Set aside to cool (can be made 1 day ahead).
Filling: Soften cream cheese. Using a hand mixer, add sugar, lemon juice and enough liquid to make filling easily spreadable (cookie dough crumbles easily). Place spoonfuls of filling on "cookie" and spread around.

Topping: Slice fruit and create a design on top. Only limitation is your imagination.

HOLIDAY CHOCOLATE CHERRY COOKIE PIZZA

1/2 c. butter, softened
1/2 c. firmly packed brown sugar
1 tsp. vanilla
1 c. flour
1 c. coarsely chopped semi sweet or milk chocolate chips, halves
1/2 c. coarsely chopped pecans
1/3 c. red & green candied cherries, halves
Confectioners sugar

Preheat oven to 375 degrees. In large mixer bowl beat butter and brown sugar until light and fluffy. Blend in vanilla. Gradually add flour, mixing until blended. Stir in chocolate, pecans and cherries. Pat mixture evenly over surface of a lightly greased, flat 11 to 12 inch diameter pizza pan, dough usually is thick so use your fingers to spread nearly to outer edge of pan. Bake until well browned, 14 to 16 minutes. Cool for 10 minutes in pan on wire rack, then use a pizza cutter or knife to cut into wedges. Sprinkle lightly with confectioners sugar. Makes 18 wedge shaped cookies.
