I cut the following veggies into small-med size pieces:
zucchini
summer squash
red peppers
shallots

I placed them on a foil lined pan, sprayed them with a touch of olive oil, added some seasoning and put them in the oven at 450 for 30 min.

The shallots were awesome as were the red peppers. But, the zukes and squash basically turned to mush. What did I do wrong?

The zucchini and the squash have a higher content of water then the others.The time and temp was too high and too long for those two.Group your veges for roasting on their water content.

Probably cooked those particular veggies too much. They have more water than the other two vegetables that turned out well. By the way, one of my favorite side dishes is to slice a zucchini and a yellow squash, and pan cook (sautee) them in olive oil. Once they are fairly cooked, I add a sliced tomato and some ground oregano. Yum!

you should have roasted them separately. Zucchini and summer squash consist mostly of water.
Next time roast them separately and not for 30 minutes either. They get done within 15 minutes.

U cooked'm 2 long.I recently made a dish that included zucchini.Everything else was also great.Except 4 that.

cook them at 350 20 min then check them but cook seperetly from others

I think you used wrong ingredients for the oven or you put it on too long
