HOMEMADE BUTTERMILK BISCUITS
2 c. sifted flour (bread flour is best)
3 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. sugar
1/3 c. Crisco
1 c. buttermilk
Sift together dry ingredients. Cut in the shortening with a fork or pastry blender, it will be coarse crumbs. Add buttermilk all at once and stir until the dough follows the fork around the bowl. Turn out and knead only 5 to 6 times. (Too much handling makes them tough.) Roll to about 1/2 inch thick. Cut with round cookie cutter or glass (cup) dipped in flour. Place in greased pan. Brush gently with melted butter. Bake at 375 to 400 degrees for 10 to 12 minutes. When baked, brush again with melted butter.
Delicious served hot with butter and honey..

The Barefoot Contessa Cookbook has a wonderful recipe for scones (sometimes called biscuits in the United States). It is fairly simple and the only trick is making sure your ingredients are cold before you start.
Combine 4 cups of flour, 2 tablespoons baking powder, and 2 teaspoons of salt in a mixer bowl. Add 3/4 pound of chopped chilled butter (even better if it is frozen!). Mix together 4 cold eggs and 1 cup of cold whipping cream, and add to the flour/butter mixture. Roll out on a well floured surface until it is approximately 3/4 inch thick and cut into 4 inch squares, then cut the squares in half diagonally. Bake at 400 for 20 minutes or until cooked on a baking sheet lined with parchment paper.

Whipping Cream Biscuits
3 dozen 17 min 5 min prep
1 1/2 cups self rising flour
1/2 pint whipping cream
Mix the flour and the cream until blended;.
Butter hands well and form the dough into ping pong ball sizes.
Place on baking sheet 1 inch apart.
Bake at 425°F for 10 to 12 minutes or until golden brown.

The best biscuit recipe I have tried is as follows:
2 c. flour
3 tsps. baking powder
1/2 tsp. salt
1/2 c. shortening
3/4 - 1 c. milk
Mix first 4 ingredients together. Add enough milk to make dough moist ( I usually use 1 cup). Roll out dough, cut and bake at 450 degrees for 8-10 mins.

Try these, they are easy and delicious
Red Lobster Cheese Garlic Biscuits
2 cups baking mix (like Bisquick)
1/2 cup shredded cheddar cheese
2/3 cup milk
1/4 cup margarine or butter, melted
1/4 teaspoon garlic powder
Preheat oven to 450. Mix Baking mix, milk, and cheese until soft dough
forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto
ungreased cookie sheet. Bake 8 to 10 minutes or until golden brown.
Mix melted margarine and garlic powder and brush over warm biscuits
before removing from the cookie sheet. Makes 10-12 biscuits.

Biscuits
These biscuits are very light and smooth tasting and taste great with preserves. You can substitute fat free cream cheese and skim milk, but if you use skim milk add about 1/3 cup of powdered creamora. I roll them out to almost 1/2 inch thick to make larger biscuits.
8-10 servings 30 min 15 min prep
2 1/2 cups all-purpose flour
1 (8 ounce) package cream cheese
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon granulated sugar (or less)
milk, to moisten
Preheat oven to 375 degrees.
Mix flour, baking powder, salt, and sugar in large bowl.
Using a pastry blender, cut cream cheese into flour mixture until it resembles coarse crumbs.
Mix just enough milk in to moisten.
Roll on lightly floured surface and cut with round cutter.
Place on lightly greased baking sheet and bake at 375 for about 15 minutes.

make sure the recipe is simple. More complex is not always better. Try the recipe on the back of a Bisquik box. Don't forget to flower you board. It is annoying if you forget to . Believe me. I've been there.
