Sour cream will change the flavor. Instead use a beurre manie, it is like a roux except it is added to sauces after you make them then realize they are to liquidy.
A beurre manie consists of equal parts of softened butter and flour, which you stir together. Start with 3 Tbs of butter to 3 Tbs of flour and mix. Then whisk half the beurre manié into your hot or warm soup (you may not need all of the beurre manie). Once the soup comes up to a boil again, you'll see if the beurre manie has thickened it enough. If not, add the rest of the beurre manie and bring to a boil again.
I've done this and it is very simple and it works well without ruining the taste or textore of my soups or sauces.

Adding milk instead of water will make your soup creamier. This may not be desirable in some flavors of soup, but should work well in a chowder.

Your idea sounds delicious, but I'm thinking try half sour cream, half milk, otherwise it might not be soupy enough.
You could also try using heavy cream instead of milk.
With canned creamed condensed soups, always use milk (or cream) instead of water, or it's way too runny.

by insteasd of using 1 can of water use 1 can of milk but some soups taste better with water lile chicken noodle soup what i do is if it says cream of something i use milk but if its something waterish like a beef soup or broth I would use water

yes and take a heaping tablespoon of flour and add milk stir well in a small bowl and pour that in it will thicken the soup and if it's too thick add water( you can also mix it in the empty soup can)

If you don't want all those extra calories - mix 1 Tbl butter and 1 Tbl flour in a pan and heat it till it is a paste (roux) then add your liquid. It will thicken it just like making gravy.
