i know many different cultures believe in the powers of different herbs or spices, but what are the most common meanings/uses for common kitchen herbs/spices?

The "powers" of herbs and spices has nothing to do with belief. It is the chemicals produced by the plant that have actual medicinal qualities. Interesting, prior to the early 1900's American pharmacology was botanically based, e.g. foxglove produces digitalis (heart medication), willow bark produces salicylic acid (pain medication found in aspirin). Now most people have forgotten that and thing everything is some chemical cooked up in a giant drug company's lab.
Many kitchen herbs/spices like oregano, tumeric, have anti-oxidant properties or are good for the blood, e.g. garlic. Ginger helps break a cold. I suggest you check out some of the better herbal sites for a complete list:) There are people who study this stuff and can give you the accurate information you require. Check out http://www.emedicinal.com/ for starters, they have a medicinal herb database.
