the coffee gains acid the longer it sits in the pot. Listen to me please. I'm a coffee expert. You shouldn't drink coffee after 30 minutes of brewing.

I don't see why it would be a problem. I have done the same thing. I have actually drank coffee that was 2 and 3 days old. I have also used the same filter from the pot before. 1 thing however, I know for a fact that if you let coffee sit for a week, it will start to produce mold. I had a penicillin factory one time.
I drink mostly iced coffee now.

I don't think this is a health issue, as long as you get it hot enough to kill any accumulated bacteria. However, I think you are probably drinking a crappy cup of coffee. I thought that the acidic nature and the oxidization effect made coffee break down into vile crap in short order. I would just measure your water and grounds to brew the amount you want to drink at the time.
Edit: One of these days I want to try making coffee with coffee instead of water.

I have no clue, I'm only 14. But what I do know is that coffee is bad for you. An apple will wake you up better in the morning than coffee.

I put cream and sugar in the remaining coffee, put it in a bottle, tightly closed and put in the refrigerator. When I come back, I drink it straight or microwave it before drinking.
I would not like to leave my coffee on the coffee pot, unattended for 8 hours. What if a spider gets in, and you catch it in your mouth ? What if the spider dissolves in the coffee. Have you ever seen a fly in your coffee ? What about hair or dust mite ?

If you take the coffee off the heat, let it cool, and refrigerate it before you need to leave the house--great! That way it stays fresh, and doesn't thicken up like mud.
