That pickle juice is GREAT if you want to pickle some carrot sticks in it, that's about all, though. It is too diluted to use for making pickles from scratch. To make your own pickles, you need to soak 2-3 inch cukes in salt water (brine solutions) for about 3 days, and THEN you drain all that and cook them with (fresh/dried) pickling spices, salt and sugar. The end result is the green tinged liquid you see in pickle jars. However, FRESH pickles (that you make yourself) are way greener (not yellow-green) than the store bought variety.

I believe that when cucumbers are pickled they're stored for some time in the juices, and if you've already opened the jar and had it in your fridge for some time it may spoil before the new cucumbers become pickles.
