I bought two starfruit which were yellow and I assumed ripe. I ate the first one which was a bit sour and left the second for two weeks during which time it began to go brown and smell very sweet. I've tried eating it and it tasted too ripe. So when is the starfruit/carambola ripe and ready to eat?

Here's a picture of more fruit on the same tree above turning toward ripe. Notice the green edges. Once the edges are fully yellow/orange (depending on variety), the fruit is then perfect for eating

Carambola is firm like an apple. It's great to eat right our of hand. More often, the fruit is sliced and when you do, each piece shows a near perfect star shape. Some call carambola "star apple" or "star fruit" for this reason, but there is another tropical fruit with that name

Starfruit are yellow maybe it wasn't quite ripe enough the 1st time I think it should be yellow like a lemon colour just after the green tinge has gone from the edges
