I have found THE best friend chicken recipe ... without even frying it. You take the skin off the chicken (I use drums). In one bowl mix together an egg and some tabasco or other hot sauce - if you like it really hot, add lots, other wise, just a bit. In another bowl mix together bread crumbs and cayenne pepper - for a cup of crumbs I use around 1/2 tsp cayenne (adjust according to how hot you like it). Spray a cookie sheet with cooking spray (like Pam). Dip the chicken in the egg mix, then in the crumbs and then put on the cookie sheet. When you have them all done, give them a quick spray of the cooking spray. Pop in a 375F oven for about 1 hour 15 minutes. So good! Dip in ranch dip or just munch away. And you have fried chicken without all the grease and calories!

Basics are garlic powder or salt, and pepper. If you want to get into herbs you can use dried basil or thyme for a really nice flavor, even rosemary. I also like a little paprika for color, maybe a dash of cumin or cayenne for zing. Put it in the flour you use to coat it with so you get an even distribution.

Season either the flour or the batter with salt/pepper/cayenne powder/garlic salt, and then shoot some salt on to the pieces when you take them out of the oil, and put them on the paper towels, to drain.

I do 2 diverse issues. from time to time I beer batter mine. I blend a cup of flour to a can of beer and upload 2 tablespoons of Tony Cachere's seasoning to my batter. in case you flour your fowl previous to dipping, the batter sticks maximum ideal. I attempt this with fowl strips each and each and every of the time. in the different case, I marinate in buttermilk. Then in a gallon length ziploc I placed a pair cups flour and integrate that with 2 tbps of Tony Cachere's and that i bread my fowl that has marinated and fry it in solid sparkling vegetable oil it is already warm at 350 ranges. It tastes a useless ringer for southern fried fowl at the same time as done.

Mix poultry seasoning in with the batter or breading. You can also use seasoned salt and pepper, or anything else you would like to season it with.
