I would sprinkle powdered sugar over it or make a simple glaze.
Here's a basic glaze recipe:
Difficulty: Easy
Time Required: 10 minutes
1. Melt 1/4 cup (4 tablespoons) of butter in a saucepan or microwave.
2. Sift 2 cups of powdered sugar into a medium size bowl.
3. Add the melted butter to the powdered sugar.
4. Add 2 tablespoons of milk.
5. If desired, add 1/4 teaspoon of almond extract or 1/2 teaspoon of vanilla for flavor.
6. Beat until smooth and creamy, adding a little more milk if necessary.
7. Drizzle over a cooled cake.
Tips:
1. For a richer and creamier glaze, use heavy cream in place of the milk.
2. Substitute citrus juice for the milk and add a little grated zest for a citrus glaze.
~~~~~~~
Or if you have a can of vanilla frosting on hand you could melt it and pour it over the cake. Usually when I make a bundt I don't frost it like a regular cake though. I just make a glaze which isn't hard at all.
Cream Cheese Icing, a Lemon Glaze or icing, or just melted white chocolate would all be good.
You could do cream cheese or make something with saffron--saffron goes well with pistachios --you could add some of it to the cream cheese icing--it would give it an ethnic flavor (Indian)--if he's into that--otherwise I'd stick with the cream cheese icing...
Try a lemon flavored icing it goes well with poppyseeds! Take a regular white icing and add some lemon extract and mix it together.
Use creamcheese fronsting. Like the kind you would use for a carrot cake. Or you could just sprinkle powdered sugar.
I would do a simple cream cheese-powdered sugar glaze, especially if you're doing a bundt cake.
Use pink and white icing. You could also get little heart sprinkles or gimmies. (Those long thin sugary ones that EVERYNE uses but don't know the name of . . . )
