You can go to a salon and get a Malibu treatment. This removes all the build up from styling and bad water. It only costs about $10. Or if you have a Sally's Beauty Supply you can get them there for about $2.50 a pack. They are in little purple packs, and I think they are called Ion treatments. You will also have to buy a hair dye bottle to apply it.
I buy the ones at Sally's. I have long thick hair, so I buy two of them. All you do is wash your hair (don't condition), and apply the product. If you have a lot of build up leave it in for 20 minutes, and use a blow dryer on it for about the last 10 minutes.

I know it sounds gross but when you shower rinse your hair with vinegar for a couple days and it dissolves alot of different buildups but also helps your roots grow out.

PS apple cider vinegar is the best

Rinsing your hair with distilled vinegar will remove the build up.
