Add about 1/2 c. mayonnaise , or add about 1/3 C milk to sub for the missing egg... I've done this before and it turned out fine. Blizzard, you say??? So glad I'm down South. Stay warm, friend !!!

I did the same thing a couple weeks ago. I just added an 1/8 of a cup of water to the batter and everything turned out fine! You could probably add milk or oil too.

Steph,
Either reduce your recipe by 1/3 or borrow an egg from a neighbor.
Eggs and flour recipes are very specific. You have to use exact amounts.

2 eggs is fine.I've done that myself many times. You can, however add a couple teaspoons water if you feel you need to. Like for moisture if you want to experiment. But otherwise just use 2 eggs.Cupcakes will be fine.

Try a little milk, oil, or water. That should do the trick. I'm here in the blizzard with you, stay warm!

My first choice would be to borrow one from a neighbor.
After that I would do the mayo substitute as suggested above.

Well you could always use one table spoon of meraunge powder and a tablespoon of water. It makes an eggwhite. But I don't know about the yolk.
