beer bbq chicken

4lbs breasts/thighs seasoned w/salt & pepper, then browned on both sides in oiled skillet

-put browned chicken in 4qt or larger slow cooker
-add in 2 med onions (wedges)
-mix 1 cup dark beer with 1 1/2 cup bbq sauce of choice
-pour sauce mixture over chicken & onions

cook on low 7-8hrs, or high 3-4hrs

All Day Macaroni And Cheese

8 ounces elbow macaroni, cooked and drained
4 cups(16 ounces) shredded sharp Chedder Cheese
1 can (12 ounces) evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoonblack pepper

Place the cooked macaroni in crockpot that has been sprayed with nonstick cooking spray.
Add the remaining ingredents, all except 1 cup of the cheese, mix well.
Sprinkle with the remaining 1 cup of cheese and then cover and cook on low setting for 5 to 6 hours or until the mixture is firm and golden around the edges.
Do not remove the cover or stir until it has finished Cooking.

I like to cook baked potatoes. You just wrap them in foil and stack them in the crockpot and bake on low for about 4 to 6 hours. I put them in in the morning and when I get home from work they are done.

Here is also a recipe for a chocolate cake you can make in the crockpot (it makes a chocolate pudding/sauce in the bottom and the cake floats to the top....very yummy! My kids love it.) The recipe was in the Family Fun magazine a few months ago.

Chocolate Mud Cake

1 cup all-purpose flour
2 teaspoons baking powder
6 tablespoons butter
2 ounces semisweet chocolate (or 1/3 cup chocolate chips)
2/3 plus 1/3 cup sugar
3 tablespoons plus 1/3 cup Dutch-processed cocoa
1 tablespoon vanilla extract
1/4 teaspoon salt
1/3 cup milk
1 egg yolk
1/3 cup brown sugar
11/2 cups hot water
Whipped cream or ice cream

Step 1
Coat the inside of a 2 1/2- to 5-quart slow cooker with cooking spray. (Note: the cake's cooking time and final appearance will vary depending on your crock's size.)

Step 2
Whisk together the flour and baking powder in a medium bowl and set aside. In a large bowl, melt the butter and chocolate in the microwave or over a pan of simmering water and mix well.

Step 3
Whisk in the 2/3 cup of sugar, 3 tablespoons of cocoa, vanilla extract, salt, milk, and egg yolk. Add the flour mixture and stir until thoroughly mixed.

Step 4
Pour the batter into the slow cooker and spread it evenly. In a medium bowl, whisk together the remaining sugar, cocoa, and hot water until the sugar is dissolved.

Step 5
Pour the mixture over the batter in the slow cooker. Cover and cook on high for 1 to 2 hours, depending on the size of the crock pot.

Step 6
Even when done, the cake will be very moist and floating on a layer of molten chocolate, but you'll know it's ready when nearly all of the cake is set and the edges begin to pull away from the sides of the pot. (As you check, try not to let the condensed steam from the lid drip onto the cake.)

Step 7
When it's done, turn off the power and remove the lid. Let it cool for 25 minutes, then serve it in bowls topped with whipped cream or ice cream. Makes 6 to 8 servings.

I like to put in chicken breast and cover it with cream of chicken soup. I don't like my chicken breast too dry so I only keep it in there for 4 hours on low.

Then I serve it over rice with steamed veggies. I buy a frozen mix with corn, peas, carrots and beans.

Very easy dinner and very tasty!

Also, when I cook my rice, instead of using salt I use a cube of chicken boullion. Rice has a better taste.

I also make ribs in the crock pot. On low for about 6-10 hours, depending on how many you have in there. I just drench them in my favourite BBQ sauce..(Tony Roma's) and turn them over half way through cooking so the top parts don't dry out too much.

Roast Beef is really good too!

You can cook lots of stuff in a crockpot - my mom even makes bread pudding in it. Look www.crockpot.com also Betty Crocker has a recipe book thats entirely about crockpot cooking.
