Evolution is a scientific theory (in other words, it is a set of propositions based on substantial and repeatable field and laboratory evidence) based on observations which were made scientifically (close observation, control groups, isolated criteria, repetition etc). It is a concluding argument based on good scientific practice. You can, to some extent, "do" chemistry, physics or biology. You can't "do" evolution.
Those who have answered with details of the sorts of science that have contributed to our understanding of evolutionary process in nature, however, are substantively right.
