Tomato paste is the thickener that you want to use. Also, simmering with the lid off cooks off a lot of the liquid. So simmer and stir until you reach the thickness that you like.

Add a can of stewed/diced tomatos to a big can (16-24 oz) can of tomato sauce. Season and let simmer at med-med/high for approximately 45 minutes. If too thick add some chicken stock for "slow cooked" flavor.

add a can of tomatoe paste to your sauce (store bought is fine). It is nice to add vegetables such as mushrooms, onion and green pepper if you are reducing the amount of meat. I will often put a sauce in my slow cooker and add tomatoe paste toward the end of the cooking time if I think it is not thick enough.

Make your sauce as normal but use some starch water from your already cooked noodles - it makes it a bit thicker.
I also strain all ingredients and use tomato paste to add more flavor and less juice from real tomatoes.

Use tomato paste and it will be thick,but watch not too thick.You can always add liquid to thin it out for you...Hope this helps.....
