Cottage cheese is the product created right before cheese is allowed to harden. It is just moist curds. Sour cream is actually a combination of cream and buttermilk. Aside from those things, the texture and taste of each are different.

Neither are actually cheeses. Sour Cream is made with the cream of the milk and a portion of the milk fat. Cottage Cheese is actually the curd of the milk with vinegar added to increase the elasticity.

I have made many MANY cheesecakes with cottage cheese and the people eating these cheesecakes had no idea until I told them. I too hate cottage cheese but as cheesecake it is fabulous.(and I am picky) Generally your toppings are sooooo darn over powering in their flavor that even those who claim they can taste the difference really admit it is still pretty darn good cheesecake. You go ahead and make it... You will be pleasantly surprised. I always have a tub or two of cottage cheese in the freezer for any cheesecake orders I get. My customers KNOW I use cottage cheese and they couldn't care less. Happy Baking ! : )

Cottage cheese is a skimmed milk cheese, sour cream is a full fat cream so cottage cheese is cheese, and lower fat, and is lumpy in texture. Sour cream is not.
