2 Large Red Peppers
1 Small Onion
3 Cloves Garlic
1 Tin Tomatoes (14oz/400g)
Sunflower Oil
Salt and Pepper
Peel and chop the onion and garlic, and fry gently in a little oil.
Wash, de-seed and chop the pepper and add to the onions.
Cook for 10 minutes then add the tomatoes and a pinch of salt and pepper.
Allow to cook for a further 5 to 10 minutes, then blend and adjust the seasoning.
If you like a more tangy sauce, include half a chilli pepper with the red pepper or add a pinch of chilli powder.

This is a sauce that the Lebanese call Sayadi... its a red pepper and tomato sauce to go with fish...
2 red peppers, seeded ( You may choose to add a little spice to the sweet red bells as well)
2 cups diced tomatoes
1/4 cup olive oil
4 cloves of garlic
1 large onion, finely diced
1/4 cup finely chopped parsley
1 tablespoon chopped fresh mint
1/4 cup toasted walnuts and pine nuts,each
salt, fresh ground black pepper
1teaspoon allspice
1/4 teaspoon cinnamon
1tblspoon lemon juice ( or pomegranite)
place your red pepper in a food processor, pulse 3-4 times, add walnuts only, and pulse again. Season with a dash of salt.
heat olive oil in pan, add onions, and sautee until translucent.Season with a dash of salt.
Add the garlic, and then add the red pepper mixture.
Stir and add tomatoes about a minute afterwards. Let this mixture come to a simmer and lower the heat for about ten minutes, stirring occasionally, and adding the remaining spices.
Adjust seasoning to taste. ( If using for chicken, add chicken broth, or even bouillion cube to the sauce mixture, and reduce salt). Serve with the pine nuts and parsley as a garnish on top.

Here is a easy recipe
1/2 gallon sliced peppers (hot or
sweet or both)
32 oz. ketchup
2 c. vinegar
Salt to taste
2 c. sugar
1 c. oil
4 cloves garlic, chopped
Cook all but peppers 10 minutes. Add peppers and cook 8 minutes longer. Put in jars and seal.

instead of making it. Try going to an asian market or the asian section of your grocery store and get Chili Sauce...its wicked good with fish chicken and a lot of other things

fry ur onion garlic and peppers on a low heat until nice and soft, and the onions brown and caramelised, add your cream and increase the heat, give it a swirl let it reduce a little, season and serve.....easy out !!
