The term torte is mostly to define round cakes, often having several layers of different ingredients.

You can use everything from fruit to chocolate and nuts in them.

"Torte" is the german word for Gateau or Fruit Tart.

Of course, you can use juicy red apples in your recipe. I have one german recipe which is very good. Do give it a try.

Apple-Marzipan-Tart

Ingredients:

1 packet (450 g) puff pastry (fresh, ready rolled from „Landmann“ or frozen pastry, to be thawed first
25 g vanilla pudding powder (“Dr. Oetker” Vanille-Puddingpulver Bourbon)
3 tablespoons sugar
250 ml fresh milk
100 g marzipan (Marzipan-Rohmasse)
1 eggyolk
1 tablespoon ground almonds (gemahlene Mandeln)
2 tablespoons Amaretto (almond liquor)
5 apples
1 tablespoon ground cinnamon
3 – 4 tablespoons apricot marmalade (Aprikosemarmelade)

Method:

Preheat oven to 200º C (fan or Umluft: 180ºC, Gas: 4) for 15 minutes. Butter the sides of a “Tart” baking tin (26 cm Ø), preferably with a loose bottom and place a pergament baking paper on the base of the baking tin. Place the rolled out fresh pastry to cover the base and sides of the baking tin. Cut off the protruding pastry on the sides. Poke the bottom of the cake with a fork in order that the pastry can “breathe” during baking.

To prepare the filling: mix the pudding powder, 2 tbsp sugar and 3 tbsp milk together. Pour the balance of the milk in a saucepan and bring to boil under medium heat. Be careful that it does not boiled over. Remove the saucepan from heat and stir in the pudding powder mixture by using a whisk. Put the saucepan back on reduced heat and keep stirring until it starts to boil again. Remove from heat. Stir in the marzipan (to be broken into small pieces), eggyolk, ground almonds and 1 tbsp Amaretto into the pudding mixture. Pour the filling into the baking tin and spread it evenly.

Peel and quarter the apples and remove the seeds. Cut them into thin wedges and place them in “fan-shaped” style (dächerartig) on the filling. Mix 1 tbsp sugar with 1 tablespoon ground cinnamon and sprinkle it over the apples.

Bake the tart in the oven for about 25 Minutes. In the meantime, warm up the marmalade in a small saucepan. Once the cake is ready, remove it from the oven and brush the marmalade on the baked apples for a nice glaze.
