I believe in creation : )

Really does it matter? Yes, they are beautiful. The galaxies were created because the spreading matter from the big bang was not uniform. As the super-hot gasses began to slow down, 'clumps' formed because of the non-uniformity. These 'clumps' then cooled down to form the galaxies containing proto-stars. Gas giants were formed, went supernova and created the rare elements needed to form planets and ultimately life.

I am an agnostic, I believe the universe was created billions of years ago from the big bang. But one of the reasons there are doubts in my mind is that the universe that was created is so beautiful. It is hard to believe that it is random chance creating beauty. It could just as easily be an eye-sore.

Neither. They are neither created nor the result of random chance. They are instead the result of beautiful mathematical laws. These mathematical laws of such great beauty have been selected by our own existence.

The answer to the origin of apparent complexity such as the beautiful galaxies you have shown, is not to presuppose they were created by an even greater complexity. You don't explain a seeming improbability by a greater improbability. We know how complexity arises in complex systems and it is through selection. In the case of biological systems it is through Natural Selection. You don't need to violate Occam's razor by presupposing an infinitely improbable creator to do it.
Look at Wolfram's rule 110 for a simple example , the rule is trivially simple ( Just one line of computer code ). Yet it has been mathematically been proven that it generates any level of complexity desired. You only need to "select" where in the output of that rule you wish to look. Indeed it has been mathematically proven that somewhere within that output one can find any finite output you wish to find. You can find a representation of all of Shakespeare, or all of the DNA of every living thing, or even everything within the observable universe including your beautiful galaxies. The output as a whole is kolmogorov simple however within that simplicity one can select unlimited complexity. The key here is the word "select". Local complexity is selected from simplicity and variance.

In the case of our own existence we have a profound selection mechanism: Our own existence" We have selected a locally complex and beautiful region of reality because only local complexity and its resulting beauty enables our existence and evolution. For every beautiful region we might find ourselves in there are likely a near infinite number of ugly regions which are completely non-conducive to our existence.

Ripples generated tiny fluctuations in temperature and density caused by the big bang, created the seeds from which all cosmic architecture—from stars to gargantuan clusters of galaxies to galactic super clusters—ultimately arose.

personally I don'e believe anything to do with the creation of the universe is random. I think the universe, along with humans are still evolving just as the Creator intended.

The 'random' thing is a complete misconception. They are a product of natural forces. One can appreciate such 'design' in more earthly objects such as snowflakes or diamonds.
Long story short, there is no need for some intelligent force.

The bible clearly says that they do not exist. They are merely lights which god placed in the firmament. You have been deluded by the "science" of "astronomy" into thinking that the sun, moon, planets, and stars are physical bodies. You need to recognize your sinful error and come back to the simple truths of the bible.

They are beautiful in any case.
