I found this recipe the other day and it was a HUGE hit (even with my incredibly picky 3 year old and 19 month old sons). YUM!

P.S. I substituted cheddar cheese for the Swiss, and it was great. Swiss probably makes it even better though--the tanginess of the cheese.

Easy Bacon Pie

12 slices bacon, crisply cooked and crumbled
1 cup shredded swiss cheese
1/3 cup chopped onions
1/2 cup Bisquick
1 cup milk
1/8 teaspoon pepper
2 eggs

Heat oven to 400 and grease 9 inch pie plate.

Sprinkle plate with bacon, cheese and onion.

In a mixing bowl, mix remaining ingredients until blended and pour in to pie plate.

Bake 35-40 min until knife comes out clean.

Let sit 5 minutes before serving.

Baked Mac n Cheese with Bacon
Bacon and Pasta (either carbonara or alfredo style)
etc.
The list is endless. Bacon can almost be added to any dish (kid-friendly or otherwise). Look up a recipe depending on what you have in your pantry and jazz it up by adding the bacon. Use the bacon fat to cook the rest of the dish to add more flavor.

Cheese dreams. I used to love these as a kid, fry up your bacon, get out the bread, put some process cheese or real chedder on the bread then the fried bacon and stick them in the oven open faced, kinda like a grilled cheese and bacon only it's open faced and no butter. Loved them!!

Hidden Bacon Cheese Burgers

Fry up the bacon until it is done, but not crisp. Drain and cool, then chop the bacon. Add it to your regular hamburger recipe, cook, top with cheese.

That is of course if you have all that stuff.

Have breakfast for dinner.... Bacon and eggs, a bacon omelet maybe.

BTLs of course. Easy for kids to make themselves too.

Corn-Bacon Chowder

INGREDIENTS
2 1/2 pounds potatoes, peeled and cubed
1 pound sliced bacon
2 (10.75 ounce) cans condensed cream of potato soup
2 (10.75 ounce) cans condensed cream of mushroom soup
1 (10 ounce) can canned whole kernel corn
2 cups whole milk, or as needed
1/4 teaspoon curry powder, optional
1 cup salt and black pepper to taste

DIRECTIONS
Place potatoes in a large pot with enough water to cover. Bring to a boil, and cook until tender, about 10 minutes; drain.
Meanwhile, place bacon in a large deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside until potatoes are done.
Add the bacon, potato soup, mushroom soup, corn, milk, and curry powder to the potato pot, and simmer over medium heat at least 15 minutes, stirring often. Season to taste with salt and pepper, and serve.

12 ounces bacon slices, chopped

2-1/2 cups whipping cream
1-1/2 cups whole milk
3-1/2 pounds Yukon Gold potatoes (or russets), peeled, thinly sliced into rounds
1-1/2 teaspoons salt
1 teaspoon freshly ground black pepper
8 ounces arugula, trimmed, coarsely chopped
2 cups grated Gruyere cheese


Instructions
Position rack in center of oven and preheat to 375 degrees F. Butter 13 x9 x 2-inch baking dish. Cook bacon in heavy large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towels and drain.

Mix cream and milk in 4-cup measuring cup. Layer 1/3 of potatoes in prepared dish; overlap slightly. Sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper. Top potatoes with half of arugula. Top with 1/3 of cheese and 1/3 of bacon. Pour 1 cup cream mixture over. Repeat layering. Top with remaining potatoes. Sprinkle with 1/2 teaspoon salt, 1/2 teaspoon pepper, remaining cheese and bacon. Pour remaining cream mixture over.

Bake gratin uncovered until potatoes are tender and cream mixture thickens, about 1 hour 15 minutes. Let stand 15 minutes before serving. (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and keep refrigerated. Rewarm, covered with foil, in 375 degrees F oven about 30 minutes.)

Yield: 10 servings

Check out this website. It has a ton of recipes and you can filter them by diet, food, prep time etc.

I used this site to plan meals for the local meals on wheels program and was able to provide 3-5 week cycles of completely different food that had to easy to prepare for 700.

make them a bacon, egg & chees sandwhich.
fry bacon dry it them crumble it crack some eggs pour over bacon and stir when almost done set a piece of chees on it all for aa few min. then put on toast or just on a plate, they will love it.you can also make a B.L.T if you have tomatoe and lett.

first you clean the potatoes then you bake it and then scoop it out and cook the bacon and crush it into pieces and save the potatoes skin for later use then mash the potatoes with green onions and blue cheese then rebaked in a potato shell
