My biggest concerns are sealing them and when/where to apply the egg wash.

Put just a tiny bit of the filling in so they're not overfilled. Then brush the edges with the wash and seal. I love making ravioli with those wrappers.

lay the wonton wrapper on your surface, put a small amount of filling in the center, put the egg wash (or water) around the edges, fold over the wonton, pushing out as much air as possible by starting in the center and working your way to the edges. when you are boiling them only do a few at a time and they cook very quickly. just a word of caution, i made ravioli using the wonton wrapper and they did not come out very good, I thought they were too thin when compare to regular ravioli. good luck.

take one wrapper and place filling in center , apply egg wash to the outer edges of another wonton and place on toppress firmly to seal

or you can use just one wrapper: place filling on one corner, apply wash to sides and fold in the shape of a triangle. I like this way best. You will be using less filling this way and I think there is less chance of the filling coming out.

just push out as much air as possible and use egg white to seal the edges.
