While there are some programs that let you do this directly, I just "cheat" and use a print-screened copy in an application like MS plaint. To do this:
1) Make sure your picture is in full view within the PDF file
2) Hit the "Print Screen" key on your keyboard
3) Open up your favorite picture editing program. MS paint (which you can find in the Start menu programs under "Accessories") comes with all versions of Windows
4) Select Edit -> Paste from the menu. This should paste an image of what you saw when you pressed "Print Screen"
5) Crop and edit the photo to your liking
6) Select File -> Save... and save the picture as a type .jpg by selecting ".jpg" from the drop-down menu.
You always lose some reslution when saving to a jpg file, and there are some programs that keep a much better resolution than Paint does. But I use this method all the time when I just want a quick .jpg of something.
