Well, this is how I make my chicken Alfredo from scratch;

Cook up some of your favorite bacon, ( 1lb.)....Set aside
Slice boneless chicken pieces into strips. 1 1/2lbs.) Dredge strips in Flour, garlic powder, salt and pepper mixture.
Saute' floured strips in left over bacon grease.

Once all my chicken is sauteed to my liking, I remove the chicken to a separate plate. Pour 2 cups of heavy whipping cream and 1 1/2 cups of Parmesan cheese, plus 1 cup mozzarella into pan with the small amount of grease left. Mix constantly until thickened. Re-add your chicken to the pan, break up your bacon into bits, toss on top. Add garlic powder & extra parmesan and sweet butter to taste.

I usually pour this over spinach/cheese stuffed tortillini...Buttered & garliced.

This has been a great family favorite for ages. If you don't want to use the bacon grease for flavoring the chicken, you can substitute Olive oil, then just add bacon bits from a jar for added flavor.

The alfredo alone is simply adding the Heavy whipping cream and parmesan, mozzerella and garlic, to your liking, in hot bacon grease, olive oil, or butter.

1/2 cup sweet butter
2 garlic cloves, minced
2 cups heavy cream
1/4 teaspoon white pepper
1/2 cup grated parmesan cheese
3/4 cup mozzarella cheese
1 (12 ounce) box angel hair pasta

Melt butter in medium saucepan over medium/low heat.
Add the garlic, cream, white pepper and bring mixture to a simmer.
Stir often.
Add the parmesian cheese and simmer sauce for 8-10 minutes or until sauce has thickened and is smooth.
When sauce has thickend add the mozzarella cheese and stir until smooth.
While the sauce cooks, boil noodles for 3-5 minutes.
Plate pasta on serving plates and spoon sauce over pasta.

6 tbsp. butter
1 1/2 c. whipping cream
3 to 4 c. fettucini noodles, cooked
1 c. shredded Parmesan cheese
Salt & pepper
Nutmeg

Melt butter until lightly browned. Add 1/2 cup of cream and boil rapidly until large shiny bubbles form. Stir occasionally. Reduce heat to medium and add noodles to the sauce. Pour remaining cream and cheese a little at a time. Add salt, pepper and nutmeg to taste. Serve immediately. Noodles should be kept moist but not too liquid. Makes 4 to 6 servings.

Butter and cream
grated FRESH parmesan cheese
garlic
white pepper
salt to taste
first heat butter in skillet ( the bigger the better more surface area )
let the moisture cook out of butter but don't brown it
add garlic and pepper let it heat again dont brown it this is tricky because you need high heat pour cream in and stir vigrously until a full rolling boil
add parmesan while stirring be careful not to let parmesan clump as soon as sauce thickens turn off heat and get it on noodles before it breaks

bring some heavy cream 35-40 % butterfat to a simmer
whisk in some freshly grated Locatelli Romano cheese
allow to thicken
Temper in an egg yolk or two
season w/ white pepper do not add salt
serve immediately
