I say Jack but maybe you should compromise with your son and give him a first and middle name . How about Jack Cheese.
My dogs are named:
Babygirl Jenkins
Carson Christopher
Coco Moco
Sophie Love
and my last dog has a variety of names that the whole family call her and she answers to all. They are Shaboogaboo / Boo / Bailey / Tootie

If he is in love with your son, and it is really your son's dog, then let your son name him Cheese. It's kinda cute and I doubt a lot of dogs are named Cheese.
p.s. you could name your dog Jack Spaniels Shortshot LOL

name him Pepper Jack that way he would be named a type of cheese!
P.s. every time you say his name, give him a small treat. He'll learn it very quickly, it should only take a day or two. After he comes relably when you say his name, cut back on how often you reward. Every once and a while, give him a BIG reward.

I had a similar situation. We recently rescued a Chihuahua from a local animal shelter and she had the weirdest name. My mother always wanted a Chihuahua with a Mexican name but instead, her name was Alisai..pronounced Alice-ay. The owners called her Zay Zay for short. We noticed immediately that she didn't respond to her full name but indeed responded to Zay Zay. We couldn't stand the name so I said to name her Shay, and call her Shay Shay. My mom was fighting me on it but eventually gave in since she responded to it. Plus she follows me around like a shadow. Since she preferred me, my mother allowed me to name her.
Cheese isn't the best name, but your son will love you for letting him name the dog!

Name him cheese! I am sure that you have plenty of dogs in your life time, so let your son name this one. I think it would be a great name.

Cheese?
Jack?
Colby Jack.
Jack of Cheese.
Here's how it goes.
Who will have to go yelling through the neighborhood the first time the dog gets out and what will they have to be yelling?
Would you like to be yelling,
"Here Cheese! Come here Cheese! CHEESE!"
OR
"Here Jack! Come here Jack! JACK!"
