do you have to blanche peppers before you freeze them

I cut and clean them, then put them in a zip bag and freeze them. You don't have to blanch them. I've heard that you can slice them and put them on a cookie sheet, freeze them and then bag them up, that way they won't freeze in a clump.

When I freeze peppers, the only thing I do is some chopping and cutting! I chop up a few peppers so when a recipe calls for that, it's already done. (I do freeze the chopped peppers on a cookie sheet first, then put in a ziploc bag. Otherwise, they freeze together from the water in the peppers.) I also freeze sliced peppers for stir fry etc.

I usually only freeze peppers when I have peppers getting ready to go bad. All I do is clean, cut and put into a freezer bag. I will only use these for cooking, such as pizza, chili or sausage sandwiches.

NO! If they are bell peppers, dice them or cut into strips and seal in a baggie. Get them as dry as possible before freezing. If they are hot peppers, freeze them whole. You can drop them into chili or fajitas and get the flavor that way.

I frozen Chilli peppers without a problem - just chucked them in the freezer.

They loose a bit of texture, but otherwise no probs.
