I love worcestershire sauce, but the jamaicans have Picapeppa and that is wonderful on a steak. Similar but spicier than A1. Or Sweet chilli sauce with fried chicken or shrimp.
Ketchup I eat on almost everything. I never tire of it. Shameful, I went to cooking school and learned to eat just about anything but I still love ketchup. But one I have learned to make that is lovely is ravigote( a mayonaise sauce with capers, augurk, onion and a little bit of mustard) just lovely with fried mussels. Hollandaise with the eggs and canadian bacon(please don't compare it to an egg mcmuffin).

For me, it's a toss among:
1) Fischer and Wiser's Original Raspberry Chipotle BBQ Sauce
2) Uncle Brutha's hot sauce
3) Ebese Sozo's Ethiopean hot sauces (various flavors)

For me it would have to be bechamel sauce. It is one of the five classic mother sauces. It forms the base to many other sauces. For instance I add cheese to it and pour it over pasta to make mac and cheese. I love its creamy texture.
