Yes, anyone can convert to Judaism. However, it takes much, much longer than any other religion. First, you must talk to a rabbi, and he will study with you (this can take years) until he thinks you are ready to appear before the beit din (rabbinical court).

Actually, it is very difficult to convert to judaism. You must apply to a Beit Din (house of judges) who will usually turn you away three times before allowing your conversion. You will have to study under a rabbi for a minimum of 1 year (going through all of the festivals and sabbaths).
The core belief of Judaism can be summed up in the Shema: "Hear Oh Israel, the L-rd our G-d, The L-rd is One."

And no, no Jews believe in the NT. People who do are called Christians.
