Sell by: 0301107. It looks like a month (03) and day (01)but because of the (107) I'm not sure how to read it. It's a great product and I just want to make sure I don't hold it for longer than I should. Thanks

you shoud read it backwards, 07 / 11/ 30.
From right to left, 07 is for the year 2007, 11 month, 30 day. the first zero is useless.
if you read it from left to right as 03 day, 01 month, then 107 is not the year, no product will expire on 2107
I think this will be the right reasoning. I work in the food industry and sometimes the printing machines for dates have all these figures because factories use 3 figures for the year so the first two is the month, then day, then the last three the year. some other factories use two figures for the year so the printing has one extra figure not used. In this case, the first zero.
But if you want to be sure, better contact the producer. They should have a customer assistance phone on the back of the package or a website

How long ago did you buy it? I would go with 3/11/07 that seems like the most logical answer.

Sell by doesn't necessarily mean eat by.
