In many countries, Shrove Tuesday was, and still is, a day of public revelry and carnivals. But, in Ireland long ago, it was usually a family celebration. For the faithful, Lent meant abstaining from eggs and all dairy products, so all of these had to be used up before Ash Wednesday.

The day before Ash Wednesday in the church calender is known as Shrove Tuesday and was the last day before Lent, the season for preparation for Easter, began. Foods that were forbidden during Lent, like milk, butter, eggs and so on needed to be used up so people made pancakes and had a celebration before the Lenten fasting began.
It's only in more recent years that it has been known as Pancake day since fewer people are aware of its true nature.
