Heat up a frying pan with a little olive oil. Dredge the chicken in flour and brown them in the pan. Pull the chicken out when it's browned on both sides and set aside. Rough chop your tomatoes and put them in the pan. The juice from the tomatoes should deglaze the pan and you will begin to see the makings of a sauce. Add some heavy cream to the pan and put your chicken back in. Let the chicken finish cooking, and throw in the spinach. Cook some pasta on the side and drain it off. Add your pasta to the frying pan, remove from heat and mix with parmesian cheese. Enjoy.

Steam the Chicken and Spinach separately. Serve the Tomatoes cold and sliced. Feed the cream and cheese to the cat.

Saute the chicken with the tomatoes and spinach. Make a cream sauce (might want to make it with equal parts flour and butter -low heat-, add cream after few minutes). Add the veggies to the cream sauce (add some oregano, basil and crushed red pepper). Serve the sauce over the chicken and pasta.

If it's fresh spinch, steam it first. Then I'd cut the breast in half, but not all the way off. Cut it so you can close the breast after you stuff it. Stuff the breast with a tomato slice, the spinch and the cheese. Bake the chicken until it's the meat is white and not red.
