What to do on Saint Lucia.?

We are visiting Saint Lucia for one day only, as part of our Carribean cruise. We dock at Castries. What can we reasonably expect to see or do in the day without spending a fortune and without having to join an organised trip?

You absolutely have to see the volcano - get a cab to take you there. You drive into the crater and then hike up for a better view. Very interesting.
Also, visit the Fond Doux Estate and see how cocoa grows and is processed.
