I used to make a carrot bread that used shredded carrot,flour, oil, and sugar and cinammon and was baked in a bread loaf pan. It was delicious but I lost the recipe some time ago. Does anyone have a similar recipe?

Carrot Nut Bread Recipe
2 cups grated carrots
3 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
2 teaspoons cinnamon

3 large eggs
2 cups granulated sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup milk

3/4 cup chopped walnuts


Directions

Preheat the oven to 350 degrees. Prepare two medium loaf pans by greasing and dusting with flour or lining with parchment paper.

1. Grate and measure the carrots and set aside.
2. Mix the dry ingredients together in a large bowl.
3. Whip the eggs together in a medium bowl. Stir the sugar in and then add the oil, extract, and milk.
4. Make a depression in the dry ingredients and add the wet mixture along with the carrots and nuts. Mix with a spatula until combined.
5. Divide the batter between the two loaf pans. Bake on the top shelf of the oven for 45 to 50 minutes or until the loaves test done when a toothpick is inserted in the middle of the loaves. Remove the loaves from the pans and cool on wire racks.

Cinnamon Carrot Bread
INGREDIENTS
3/4 cup white sugar
1/4 cup packed brown sugar
3/4 cup sunflower seed oil
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
2 eggs
1 pinch salt
1 cup grated carrots
1/2 cup chopped pecans
1/2 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 Degrees C). Grease and flour a 9 x 5 inch loaf pan.
In a large bowl, beat together the sugars and sunflower oil. Sift flour, baking powder, baking soda, cinnamon, and salt into the bowl while stirring occasionally. Beat the eggs together, and gradually stir into the batter until everything is combined. Mix in carrots, pecans, and vanilla until well combined. Pour batter into prepared pan.
Bake on middle rack for 60 minutes, or until it tests done. Cool in pan for 10 minutes, and then turn out onto wire rack to cool completely.
