Not sure if this fits what you are looking for, but the entire city of Petra in Jordan is made out of the mountain/cliff walls.

It also happens to be where one of the Indiana Jones movies was filmed.

Petra is a good one... also the cliff dwellings of Mesa Verde, here in Colorado. The cliff dwellings are not actually carved from the rock, but they are built of the same stone and are tucked into the cliff. Very cool.

Anasazi indian cliff dwellings in Colorado and New Mexico are good examples.

Bandelier National Monument is a cool place to explore some of these ancient ruins.
