That sounds sooo good. Roasted potatos are good. Peel red potatos and cut in half or quarters depending on the size. Parboil ten minutes. Arrange around the roast during the last 30 to 40 min. of cooking time. Brush with cooking oil, salt and pepper, and sprinkle with parsley. Turn about halfway through and repeat. They should come out golden brown and delicious. Add a side of fresh steamed green beans. Yummy!

Try a potato gallette or how about Sweet potato "chips"?

You cut the sweet potato into large cottage fry style pieces and bake them in the oven with a bit of oil, salt and pepper.

And here's a sauce that is OUT of this world to dip them in-

1c. sour cream
4 oz. cream cheese
two T. Splenda
2T. horseradish

Adjust ingredients to your preference. This sounds weird but it is SOOOO good.

Throw a bunch of halved potatoes in bottom of the roasting pan.

I like microwaved squash. Just cut in half, scoop seeds out, and put plastic wrap over. Serve in halves or scoop out into a larger serving dish. You can wash and roast the seeds and they're much better than commercially processed.

How about a carmelized onion risotto? Or any type of risotto for that matter. It makes a nice alternative to mashed potatoes or rice.

Green Bean Caserole!

Yummy!

Nothing goes better with garlic and roast beef than green beans no matter how you cook them.
