Jacob had children thru several women. Leah first then two of Rachels maid servants and finally thru Rachel. Rachel was Jacobs true love. He had Joseph and Benjamin thru Rachel. As you know Jacob thought Joseph was dead, so he was undoubtedly concerned about preserving his only remaining son thru Rachel. But why? Well, Jacob had also had a dream where God had revealed to him that his descendants would be multiplied like the dust of the earth. Jacob probably believed that this blessing would come thru the children of his wife Rachel and since he believed Joseph dead, he was "helping" God fulfill his prophecy to him by protecting what he believed was his only living son thru her.

Because Benjamin was the last son of his beloved Rachel and the brother of Joseph. He did not want to risk any harm coming to Benjamin.
Genesis 35:18 - And it came to pass, as her soul was in departing, (for she died) that she called his name Benoni: but his father called him Benjamin.
Genesis 35:24 - The sons of Rachel; Joseph, and Benjamin:
Genesis 42:4 - But Benjamin, Joseph's brother, Jacob sent not with his brethren; for he said, Lest peradventure mischief befall him.

Because he was the youngest son, and didn't want him to be lost liked Joseph. Joseph and Benjamin had the same beloved mother Rachel, and the rest came from Leah. Although on the way back his brothers to get Benjamin, because Joseph tells them to do so.

More to the point, why did he send all the rest of them? He wanted Benjamin to stay to keep him company.

Because he had already lost Joseph, he couldn't bear the thought of possibly losing Benjamin too.

Too young.
Plus Jacob looked upon him as a favorite and did not wish to take any chance in losing him.
A doting father, it seems.
