Ingredients:
6 plum tomatoes; chopped
4 cups fat-free vegetable broth
2 cups chopped green cabbage
*Optional ingredients: salt, pepper, SPLENDA, FRANK'S RedHot, TABASCO Pepper Sauce (Garlic or original), garlic salt
Directions:
In a large pot sprayed with nonstick spray, place chopped tomatoes along with any juice and seeds. Cook over medium heat for 2 – 3 minutes, stirring occasionally. Add broth and cabbage, and raise heat to high. Once soup reaches a boil, reduce heat to low and cover. Allow soup to simmer for 5 minutes. Season to taste with salt, pepper, and any of the other optional ingredients. Enjoy! Makes 5 generous 1-cup servings.

Cabbage Soup Recipe - 6 large green onions - 2 green peppers - 1 or 2 cans of tomatoes (diced or whole) - 3 carrots - 1 container (10 oz. Or so) Mushrooms - 1 bunch celery - 1/2 head cabbage - 1 package Lipton soup mix - 1 or 2 cubes bouillon (optional) - 1 48 oz can V8 juice (optional) Season to taste with salt, pepper, parsley, garlic powder, etc. Directions: 1. Slice green onions, put in pot and start to sauté with cooking spray. 2. Cut green pepper stem end off and cut in half, take seeds and membrane out. Cut the green pepper into bite size pieces and put in pot. 3. Take the outside leaves off the cabbage, cut into bite size pieces, put in pot. 4. Clean carrots cut into bite size pieces, put in pot. 5. Slice mushrooms into thick slices (otherwise they will disappear in the soup), put in pot. 6. If you would like a spicy soup, add a small amount of cayenne pepper (red pepper) now (1/3 teaspoon is quite a bit as the soup will get spicier as it cooks further). 7. You can use beef or chicken bouillon cubes for seasonings. They have all the salt and flavors you will need. 8. Use about 12 cups of water (or 8 cups and the V8 juice), cover and put heat on low. Let soup cook for a long time (two hours works well). 9. Season to taste with salt and pepper. 10. Eat all the soup you want, whenever you want for the next 7 days.

When you are using up your vegetables like Broccoli, cabbage, tomato's take the unused cuttings of the vegetables and put them in a plastic bag in your freezer. When the bag gets full take them out and wash them off quick. Take a large soup pot cut up about 4 onions and 6 cloves of garlic. Take 1/4 cup of olive oil or your favorite cooking oil/Margarine saute the onion and garlic for 4 minutes. You will know when it is done because the whole house smells great of garlic and onions. Add vegetables and enough water to leave about half an inch from the top of soup pot. Boil vegetables for about 1 hour or so. Take the pot and strain out the old vegetables. The juice is the stock to use for your future soups. (add salt to taste.) I Usually don't use salt in the stock because the vegi flavor usually is enough. But the stock you can reuse over and over. Once you have the stock you can be creative. Chop up some zucchini, add some spinach, cauliflower, what ever else you like in vegetables. about 1 tsp of black pepper per cup of stock. Heat the stock with your favorite vegetables until desired doneness. Some like veggies soft I like mine still crunchy so I let them cook for only a few minutes. For more flavor add some tomato Juice or V8. My wife doesn't like v8 so I use tomato juice.
Celery is also very tasty to add.

Zero Point Soup
Ingredients:
2 garlic cloves
1 medium yellow onion
2 medium carrots (1 ½ cup)
1 red pepper
1 stalk of celery (diced)
2 small zuccinni (diced)
2 cups of green cabbage (torn in small pieces)
2 cups of cauliflower and 2 cups of broccoli (I usually use a bag of mixed cauliflower and broccoli)
2 tsp thyme
2 tbsp parsely
½ tsp table salt
¼ tsp black pepper
2 tbsp lemon juice
6 cups of beef broth (can use vegetable or chicken broth instead of beef, if you wish)
Add garlic, veggies, thyme, & broth in large pot; cover and bring to boil on high heat; reduce and simmer for 10 min
parsley, salt, pepper, & lemon juice
This soup is excellent; it's not bland like a lot of the cabbage soup recipes out there. I make it at least once a month. Even my husband (who is not on a diet) loves it.

Cabbage, carrots, tomatoes, onions, boil it all together, throw in a beef bullion cube or some "lite" broth for flavor - really tasty and filling. Great to keep in the fridge and reheat in the microwave. One thing tho' you might want to sleep alone the first night after you start eating it :-)

you know what i really like, and its really tasty? v8 warmed up- its like tomato soup but yummier!! you can add a little pepper to it too. or get vegetable broth or chicken broth and add chopped onion and carrott, etc before warming it up!! they're so easy, and really low-calorie!!
