Molecules arise from the hamburger, and the hotter it is the more come off. These react with the receptor cells in your nose, and your brain interprets it as hamburger smell.

As they arise from the hamburger they are naturally carried away from it by gentle convection currents in the surrounding air. The critical point is that as they move away they tend to fill the space. Thus the concentration of the smell inducing molecules decreases the further away you go, with the concentration being inversely proportional to the cube of the distance.

Your nose and brain sense the change in concentration, and as the concentration increases the smell gets stronger.

Human noses are pretty good, but not by comparison to other species of animal. Moths can sense pheromones from the opposite mothly sex from miles away. Similarly, sharks can get the slightest whiff of blood in the water and track down the source, again from great distances.

I thought the smell of anything got stronger the closer you got to it.

When you smell something ting particles of what you are smelling travel up your nose. The further away from something you are the less of these particle get up your nose (because of wind, other particles in the air, etc) and vice-versa - the nearer you are the more particles get up your nose making the smell more concentrated.
