You can do lots of things with them. I like to cut them up and saute them in some oil with onions and make onion and pepper sausages sandwiches. Salsa is a good one too. This is a recipe for peppers and Parmesan cheese.
2 tablespoons extra-virgin olive oil, 2 turns of the pan
4 cloves garlic, crushed away from skin
2 green bell peppers, seeded and sliced lengthwise, 1/2-inch strips
1 large red bell pepper, seeded and sliced lengthwise, 1/2-inch strips
Salt and pepper
1/4 cup grated Parmesan, a couple of handfuls
2 tablespoons chopped flat-leaf parsley
Heat a skillet over medium high heat. Add extra-virgin olive oil, crushed garlic and peppers. Season with salt and pepper. Saute until just tender, 6 or 7 minutes. Sprinkle in cheese and remove from heat. Transfer peppers to a platter. Garnish with chopped parsley. Cover with foil to keep warm until ready to serve.

Personally I would use them to feed our guinea pigs...they love peppers....but like everyone else has said....there are so many things that you could do....the stuffed peppers sound good....would be a good easy dinner....or just slice them up for a snack...stir fry is wonderful....and I'm sure they'd be great on pizza.....you could also roast them and make a soup....with some grilled cheese....YUM!!!

Pasta Premavera, chop up your peppers with some onion and Italian squash, asparagus, basil and garlic, saute for about 5 minutes, add 3Tbs butter, meld all together and serve over Penne, or Linguini, top with Parmisan cheese. Great plate appearance.

Fajitas is my first choice, but recently, I saw this magazine article on outdoor cookouts. It had pictures of different colored peppers with the tops cut off and the condiments were placed inside each one (i.e., mayo, mustard, ketchup, etc.). If they don't sit flat, you can slice off a sliver of the bottom so it will sit level. It was so clever!

i would stir some fajitas!
lucky you in my country -mexico-the orange,red and yellow cost a fortune!
yo could thinly slice them and trow in a salad too! last night i made a red lettuce salad with green bell peper,kiwi fruit and some cashews honey mustard dressing.yummy

there are sooooo many things, ya can either make a bolognese sauce with them, or fajitas, or just use them as an appetizer with some ranch dresseng, of pizza,or a stirr fry or even just as a vegetable along with a main course
