Serves: 4 to 6
Preparation Time: 30 minutes
Cooking Time: 1 hour

You Will Need

500 g potatoes for mashing
50 g grated cheddar cheese
1 Tbsp vegetable oil
1 onion, diced
2 carrots, diced
2 sticks of celery, sliced
1 kg minced mutton
30 ml beef broth or stock
1 Tbsp flour combined with 1 tbsp of butter
150 g butter
salt and pepper to season
100 ml milk
1 large skillet
1 large saucepan
1 baking dish 15cm deep
1 bowl
1 spatula or spoon
1 strainer
1 potato masher

Step 1: Sauté the onions

Put some oil in a skillet and sauté the onions. When they are soft and starting to brown, remove them from the skillet using a slotted spoon and set to one side.

Step 2: Prepare the carrots and celery

Sauté the carrots and celery until they start to brown.

Step 3: Pre-heat the oven

Set the temperature of the oven at 220ºC.

Step 4: Sauté the meat

Heat the oil with 50 grams of butter and add the meat, stirring it until it browns.

Step 5: Add the vegetables

As it browns add the carrots and celery.

Step 6: Add the stock

When the meat has browned add the stock and stir well.

Step 7: Thicken with butter/flour

Stir in the butter and flour mixture to thicken the stock. Cook for a further couple of minutes and set the pan to one side.

Step 8: Cook the potatoes

Boil the potatoes in salted water until soft.

Step 9: Make potato purée

When the potatoes are soft, drain out the water and mash them with half of the remaining butter and grated cheese. If it is too thick add a little milk. When it has reached a smooth consistency stir in a pinch of salt and pepper to season.

Step 10: Add the onions

Stir in the sautéed onions

Step 11: Prepare the dish for the oven

Transfer the meat into the baking dish. Spread it out to make an even layer. Spoon over the mashed potato and tease the surface with a fork to create some texture. To finish, brush on the last of the melted butter.

Step 12: Bake

Place the dish in the oven and back for half an hour.

Enjoy!

That is a beef (or lamb) stew that goes into a pie crust and is topped with mashed potatoes.

You can use you favorite stew recipe for a start with !" cubes of meat and vegetables cho[[ed to that size. While that is cooking buy or bake pie crusts in the size you want (tart size or full size). Also boil potatoes and mash them to smooth (or buy powdered mashed potatoes and prepare per box recipe).

Then assemble it by spooning the stew into the crust (including its liquid and meat and vegetables. Fill a piping bag with the potatoes and squeeze them through a fat fluted tip to cover the pie on top (if no piping bag then spread it like cake topping and scratch a pattern with a fork).

Heat in a hot oven until heated through and potato topping is golden crust.

A shepherd's pie recipe with beef.
INGREDIENTS:
2 cups cooked chopped meat
1 tablespoon finely chopped onion
2 cups gravy
salt and pepper
2 cups mashed potato, prepared with milk and seasonings as desired
salt and pepper
1/8 teaspoon paprika
1 tablespoon butter
PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes. Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.
This shepherd's pie recipe serves 4.

1/2 cup finely chopped green bell peppers
1/2 cup flour
3/4 cup yellow cornmeal
1/4 cup finely chopped onion
2 cups ground round or sirloin
5 tablespoon vegetable oil
1 cup tomato sauce (8 ounce can)
2 tablespoons ketchup
2 teaspoons salt
dash lemon pepper or other seasoned pepper
1 teaspoon chili powder
1 tablespoon sugar
2 teaspoons baking powder
1/2 teaspoon thyme
1 egg
1/2 cup milk
PREPARATION:
Preheat oven to 400°. Sauté pepper, onion, and beef in 2 tablespoons of oil in skillet until beef is well browned. Stir in tomato sauce, ketchup, 1 teaspoon salt, seasoned pepper, and chili powder. Put mixture into 1 1/2 quart casserole. Stir together flour, cornmeal, sugar, baking powder, remaining salt and thyme in a bowl; add egg, milk, and rest of oil. Stir until smooth. Top the meat mixture with the batter; bake, uncovered, until the cornmeal is slightly brown and firm to touch, about 1 hour. Loosen cornmeal with a knife around edges, turn on serving plate with top side down.
Serves 8.

at my house we take ground beef and fry it up (similar to taco meat without the seasoning). lay it in the bottom of a casserole dish, layer mashed potatoes on top of that, and then cover it in cheese and bake it until it is all hot and gooey.
