Coconut Oil. It is super healthy for you and tastes pretty good also. You can buy it at your local health food store. You can buy coconut oil where it has a strong coconut taste, which in certain things I am baking/cooking (cocnut shrip~yummy!) I enjoy. You can also get it where it doesn't have a coconut taste at all.
If you are cooking with it I usually check the cake about 5-10 minutes early as I have found alot of times it has a faster cook time using coconut oil.

Using margarine as an alternative should not be a drawback, regardless that the colour of the cake could also be lighter, however I would not forgo each and use the vegetable oil because the consistency might thoroughly difference.

Butter flavored shortening... but use 20% less and add that 20% as water (since shortening has no water and butter does).
Butter flavored shortening sounds gross, but it is actually more buttery than butter.

if you do not want to use butter, or simply dont have any. you can use so other type of oil or fat. or you could use butter cream, or cream fresh.
