Being a former and having worked as a chef in Jamaica in a resort in the 1980's, the others do make some very good suggestions, but you want a light fruity wine, with a little sparkle, therefore I would recommend a light sparkling wine like Henkel Troken or a nice Portugese Vinhos Verde, it is inexpensive and makes it a lighter flavour with spicy food, the Red Stripe is a good take on it to.

When I make jerk chicken I usually serve a sharp bone dry white wine like a Portuguese Dao Branco or a Spanish white Rioja.

I would say that because Jerk chicken is spicy and full of flavour you would want something light and refreshing like a Chardonnay or a Pinot Grigio.

maybe a petite syrah.
I'm not positive what Jerk Chicken tastes like, but I think a petite syrah would go well with it. Pinot Noir might work as well. If its going to be fairly spicy I would choose a nice bold(but not too dry) shiraz.

I would no go with any red wines. Stick to whites, try a reisling (I like Chateu St. Michele) or a nice Gavurts (Madrona is nice). The trick is to drink something sweet to balance the flavors. You might even want to try a nice Chianti, I'm told it goes well with chicken dishes.

not sure. try a syra or pinot noir. I would also try " Cardinal Zyn" the winery is Bonny Doone out of Central Cali. It's pretty good. You may have trouble finding it though.
