Make red velvet cupcakes. Or you could mix in red candy sprinkles, or a few drops of wilton flavoring (available at ac moore or where wilton supplies are sold). Or just add red food coloring to the batter and/or icing.

For parties, my mother in law would put a dime in one cupcake... and whoever got that cupcake got a little present. Of course, every one was warned before hand because she didn't want anyone to choke. It made plain old chocolate cupcakes very special !
Colorful cupcakes ... these are pretty !
1 pkg white cake mix
1/2 t. blue food coloring
1/2 t. red food coloring
1 can vanilla frosting
red,white, blue sprinkles
Prepare cake batter. In a small bowl, combine 1 1/3 c. cake batter with blue food coloring, in another bowl 1/13 c. batter and red food coloring, leave remaining batter plain. Fill paper lined cups with 2 T. red batter, 2 T. plain batter, and 2 T. blue batter. Bake at 350 for 20-24 minutes. Cool for ten minutes. Frost with vanilla frosting or a cream cheese frosting. Decorate with sprinkles ( At Christmas, I make red and green cupcakes)

Surprise Cupcakes
6 Tbl Butter
3/4 Cup Sugar
2 Cups All-Purpose Flour
2 Eggs
1/4 Tsp Salt
1/2 Cup Milk
1 Tbl Baking Powder
14 Strawberries, fresh or defrosted frozen
Hershey’s Kisses or Strawberry Jam
Food Coloring, optional
• Preheat oven to 350 degrees. In a large bowl, cream the butter and sugar. Mix in the eggs, one at a time, and add the milk.
• Rinse the strawberries and cut off the greens. Mash the berries then stir them into the butter and milk mixture. May add food coloring if so desired.
• By sifting together add the flour, salt and baking powder to the berry mixture and stir until well blended.
• Line the muffin tin with paper liners. Fill cups halfway. Unwrap Hershey’s Kisses and place one in each cup on top of batter - or a 1/2 teaspoon of jam. Finishing filling the cups with the berry batter. Bake for 20-25 minutes, until muffins begin to brown.

I always keep several different flavor extracts in my kitchen pantry.
Almond flavor, banana, orange, lemon, butter, coconut etc.
A favorite at my house is orange cupcakes. I use yellow cake batter and I add some orange extract. I also take a real orange and grate some of the skin into the batter for little orange floaty pieces. I replace half the water in the recipe with orange juice too.
I frost them with vanilla frosting and then I take a white chocolate bar and with a carrot peeler, I make curls that I drop on top of each cupcake and then I grate some more orange peel on top too. Very fresh, pretty and delicious.
OR- use some banana flavoring in your batter and if you like it- coconut too. Frost with white frosting and then top that with coconut for a tropical cupcake. If you are really ambitious, get some dried mango or pineapple and cut it very tiny and sprinkle some of that on top of the tropical cupcakes too.

You can create a marbled effect by taking 1 cup of yellow cake batter and adding cocoa powder to it, then putting a bit in each cupcake and swirling it thru. Or, try adding a Hershey's kiss to each cup before you add the batter. Another thought is to consider swirling raspberry preserves with white cake mix and topping with a chocolate ganache. If you're really creative and have time, pipe a rich custard into each cupcake after its done and top with a chocolate ganach glaze....then you have your own homemade Hostess cupcakes! Cut up or mini snickers, reeses, and milkyways can also be used.

You could make happy faces on them...Color the frosting yellow using food coloring. Then use a m&m for the eyes ....Color a little bit of frosting a different color and place in a small baggie and snip of the edge. Use that as a pastry bag and make a smile.
You could add sprinkles to the batter and make a funfetti type cupcake.
You could frosting the cupcakes and add a hersheys kiss or an oreo on top.

Sometimes I will stick a Hershey's Kiss in the batter (I will usually use vanilla or a light coloured batter to contrast with the chocolate). Or, you can buy the ready-made cookie dough and you take a teaspoon sized ball and put it in the bottom of the cupcake liner. When they come out of the oven there's cookie on the bottom!

You need one Devils Food cake mix. Prepare as directed.
8oz Cream Cheese
1 egg
1/3 Cup Sugar
Chocolate chips
Pour batter into cups add 1tbsp of mixture on top of each. Bake as directed.
EVERYONE loves these and they are the best. I usually do not frost them. Now that everyone knows how good they are the disappear. The mixture sinks to the bottom of the cup cake! Enjoy!

I always add things to my cupcake batters. Like I make baileys cupcakes. I add baileys to the cupcake mix and to the icing. Or chocolate mint. I add either mint liquor or mint extract to both the cupcake mix and the icing. I also add food colouring to the icings to give them a weird colour or something.
