By whom is science defined as truth?

You are relying on subjective definitions for your reasoning. When definitions are subjective the line of reasoning has many different outcomes.

For instance a fundamentalist may state: Science is defined as truth, truth is defined as absolute, death is also defined as absolute therefore science leads to death.

A student may state: Science is defined by my teacher, my teacher is defined by boredom, boredom is defined as bad, therefore science is bad.

An atheist may state: Science is defined by truth, truth is defined by proven theory, there has never been a proven theory on the existence of God, therefore God is untruthful.

I might state: Science is defined by truth, truth is defined by honesty, honesty is defined by my mother, my mother is defined by her cooking, cooking is defined by spices, spices are made from plants, plants evolved from bacteria, bacteria is defined by disease, disease is designed by suffering, suffering defines strong character, character is defined by my mother, my mother is defined by her cooking...........

Actually love doesn't exist. What we call love is a feeling induced by hormones and neurotransmitters. It is basically dependence. and Who defined life as God. I have no God and I have plenty of life. Perhaps even some to spare.

I bet you're really bad at math. Here's your question, simplified.

Science = truth = life = god
Therefore, science = god.

...do you not see the absurdity of what you just said?

i would get another dictionary if i were you, the one you've got is giving you the wrong definitions.
science is: http://dictionary.reference.com/browse/science
truth is:http://dictionary.reference.com/browse/truth
life is: http://dictionary.reference.com/browse/life
god is: http://dictionary.reference.com/browse/god
love is: http://dictionary.reference.com/browse/love
I'd stop playing fast and loose with the meaning of words if i were you or you may find out that your car is actually a hat rack, (damned good fuel consumption but very slow).
