Use fry lite to spray your pan and use rasps, strawberries etc to fill using a sweetener if needed and serve with low fat creme fraiche or greek yogurt. Or just lemon juice and sweetener. And well done on your weight loss, (it's bloomin hard work at times isn't it?!)

Good for you! Congratulations on the weight loss! That's a really good effort! Don't mess up your diet. Pancakes will always be here. I know they're yummy, but they're also full of fat and cholesterol...and sugar if you add the maple syrup. Just be proud of yourself and the weight you've lost. Weight Watchers are great and supportive and I know that they would tell you to be proud to be a member and sit down on Pancake Tuesday and enjoy your normal breakfast. Be a proud 'weight watcher' and don't let anyone give you a hard time about not eating a bloody pancake. Buy one, if you have to, but give it to someone else or toss it in the bin. You keep going with your weight loss, you're doing great!

Pancakes are just flour and milk, fried. Use very little oil on a non-stick pan, and the pancake is low fat. Fill the pancake with fruit instead of fat. Sprinkle some low calorie sugar over this.
Alternatively use the juice of a lemon (always a favourite of mine)

I use a non-stick griddle, and don't put any oil on it. If you're using a frying pan, you can use a non-stick one as well. I have never used oil to 'fry' my pancakes.
I agree with many of the others... just have one, and have it as a dessert treat. If you try and avoid it all together you'll just crave it even more. Top with some fresh fruit and a spoonful of fat-free yogurt.
I posted my recipe on the 'how to make fluffy pancakes' question and I have figured out that each one (about 4 inches round) has around 75 calories and 3 grams of fat.

Hi, I have a no fat recipe from THE ALMOST NO FAT COOKBOOK per pancake calories57, protein2gm, carbohydrates12gm fat 0gm (makes 24 four inch pancakes) In a large bowl mix together...21/2cups whole wheat flour, or combination..1/4cup low fat soy milk..4tsp. baking powder..2tsp baking soda..1tsp salt. WHEN the dry ingredients are well combined, stir in 3 cups fruit juice(apple, orange) Mix briefly, lumps are ok. HEAT a non stick griddle or frypan lightly greased with a oiled cloth, over high heat until hot; then turn down to med/high. Spoon batter onto pan, when the tops are bubbly, turn over carefully, and cook til middle is done(you can spread apart one pancake using fork to test). Serve with any low fat toppings, as this is fat free, you could indulge a little without ruining your diet!! Keep up the good work on your diet.

Most of the fat in a pancake comes from the cooking. Using a low calorie oil-spray to prepare the griddle/frying pan and you can add just about any sauce to a pancake - I'm sure you can think of some toppings..
p.s. You've still got a week to think about it. Shrove Tuesday 2007 is NEXT TUESDAY (20th Feb)

Use a low-calorie oil spray like Fry-Light instead of normal cooking oil.
Have your pancakes with fresh fruit and / or sweetener. You can get some that sprinkle like sugar and taste pretty much like it.
However, a little bit of what you fancy does you good and as long as you dont go overboard and maybe watch the amount of calories you're taking in, you shouldnt mess up your diet.

Here are some good sounding recipes for low fat, no fat, etc. pancakes from www.cooks.com
OR try
www.fatfree.com - mostly vegan/vegetarian recipes
Try making a pancake with fruit such as an apple or blueberry pancake.
For toppings, I still prefer syrup. Just use the light version.
LOW FAT PANCAKES
1 c. flour
1 egg
1 tbsp. Puritan oil
1 1/2 c. buttermilk
1/2 tsp. baking soda
1 tbsp. sugar
Mix all ingredients together in a bowl. Heat griddle and grease lightly with oil.
LOW FAT (NO SUGAR) PANCAKES
2 egg whites
1 c. buttermilk
2 to 3 tbsp. natural applesauce (no sugar)
1 c. flour (can use SMALL PART whole wheat flour or wheat germ)
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Mix ingredients together. Spray griddle with Pam. Pour batter onto hot griddle. Serve with spreadable fruit (no sugar) or applesauce.
REALLY LOW FAT PANCAKES
3 extra lg. eggs, separated
2 c. skim milk
2 tbsp. canola oil
1 1/2 c. flour
1 tbsp. sugar
1 tbsp. baking powder
Sift together the flour, sugar and baking powder into a bowl. In a separate bowl beat egg whites until they form soft peaks. Mix milk and oil together with dry ingredients into a smooth batter. Carefully fold batter into beaten egg whites.
LOW FAT, LOW CHOLESTEROL BUTTERMILK
PANCAKES
1 1/4 c. enriched, all purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1 tbsp. sugar
1/2 tsp. salt
Egg substitute equivalent to 1 egg
1 c. buttermilk
2 tbsp. oil
Sift dry ingredients in a bowl. Combine egg substitute, milk, and oil. Add to dry ingredients, stirring until just moistened and batter is lumpy. Bake on hot griddle. Yields 8 4-inch pancakes.
