I recommend that you contact your local volunteer center. They typically have one-time or short-term volunteer opportunities that might match your interests. Volunteer centers specialize in connecting you with volunteer opportunities that meet real community needs.
You can find your volunteer center through the following links:
http://www.handsonnetwork.org/our-network/
http://pointsoflight.org/centers/find_center.cfm
Volunteer centers work with a wide variety of different non-profit agencies. So, you're bound to find something that matches up with your interests. I currently tutor children at the library, lead teen docents at a local museum, and work at our local food bank through our volunteer center.
Good luck!

Check to see if your city has a volunteer division, they have them listed all in one central location everything from cleaning a park, ushering for the local theater, sorting clothes for the clothes closets at schools and social services. You could also check with the local grammar school and see if you could help out in a classroom or help with a fundraiser. Check at your local library and see if you can help return books or man an information booth. There are just tons of stuff people need help with out there including your local scout troops and seascout units. Have fun with it!

Two things quickly came to mind:
1. Go to a soup kitchen and offer to help, I am sure there are plenty of things to do there.
2. Talk to your neighbors and offer to do work around their house, tell the up front that you are doing it to collect cash to give to a charity of your choice. Just some advice, pick a charity or cause that is close to your town's heart and people will be willing to help.

Volunteer at a local homeless shelter, youth center or public library. Also ask the minister of your church, I cleaned our church for part of mine.
