I don't remember reading in any handbook, even a Catholic one, that it had to be celebrated...
I've been married 17 years. My DH use to try to buy me Roses, but I put my foot down on that a long time ago...if he wants to buy me a plant, make it one still in the dirt. I can't imagine how its Romantic to give someone a dying flower. Other than that, we tend to just buy a bag of Valentines candy, and the whole family digs in long before the actual day.

No day should be surrendered to pagan practices. Christianity "redeemed" many days to give new Christians a cause to celebrate also. It should be a day to celebrate real love however not eroticism.
