dishes that i am looking for is COLCANNON, CORN BEEF +CABBAGE...traditional irish food

Traditional Irish dishes are sadly becoming a thing of the past simply because they evolved when times were hard and money was scarce.Now Ireland is a more affluent society,the Irish can afford more expensive ingredients and meats and the dishes you describe are seldom seen.
A simple dish was Champ and achieved by mixing chopped spring onion (Called scallions in Ireland ) through mashed potato.We still have this at home-it gives potato a lift.
A more flavorsome dish was Coddle based on boiled pork sausages and ham chunks (popular in Dublin) and then the quintessential Bacon and cabbage -still popular today.
And of course the best of all for winter months-Irish stew which was usually lamb based and into which went whatever vegetables came to hand.
If you want to add a touch of Irish authenticity to beef dishes- casseroles and the like then cook beef in Guinness.
Then you know you've come home.

Boiled bacon, 3 types cabbage and mash.

HUGE portions in St John O'Goggartys, Temple Bar, Dublin.
