Well, with my children, in the bolognaise sauce, I include carots
In the Sheppard Pie, I put peas, sweet corn and green beans. When I do Dolmades (or Koupepkia) which are usually made with wine leaves, I use spinach leaves and everybody enjoy themselves. Just be creative and don't forget that children loves cooking and messing up in the kitchen and when they are the ones who did the dinner, it taste even better.

Ants on a log is a good one....celery, cream cheese or peanut butter, and raisins

Mine love carrots or green pepper slices dipped in ranch dressing

Melt cheese over broccoli and cauliflower

or if I make like Hamburger Helper I put frozen peas and carrots in with it...they never know the difference and I know that they are eating them....

Get them involved......when it's something that they made they tend to eat it more often....

Corn fritters, I make Pizzas with my grandkids and let them add their own toppings, they go for the Broccoli everytime, I make pictures on their plates, basically though if you include them in the cooking they will try everything they have been involved in, Do you give any vouchers for these answers? I think you should.

Carrot cake! My mom used to puree the vegetables in soup to get my brother to eat them. Grate carrot finely and put into spaghetti sauce or beef burgers. Cheese dip is also good.
