Hello there,
I would like to know if I can leave the US while my status is of 2 years conditional residence based on marriage after a K1 visa. If I do leave and visit my family in Europe for a month or 2, would this affect my status as resident?

you have the same rights as a Permanent Resident, but a 6 months or longer stay may affect you, under 6 months won't. You might get an "Immigration/Customs officer that takes offense that you could afford such an absence out of the U.S. "
After all most U.S. citizens have to save money just to take 2 weeks of vacation per year. And the admitting officials are one one them, because there is almost no way most U.S. citizens will stay away from home during their total vacation time.

No, an absense of a month or two will not affect your residency, as long as it is clear that your visit is temporary and you intend to return to live in the US with your US citizen spouse.

Be very careful, however, to be in the US in time to apply for and attend the interview that will convert your conditional residency to permanent. I have heard many horror stories about how difficult it is to do that once you miss the deadline.
